Barley Mushroom Concoction Recipe

2 tablespoons oil (vegetable or your favorite oil)
1 cup chopped onion
1/2 cup chopped bell pepper (your favorite color)
2 cups sliced mushrooms
2 2/3 cups water
1 cup barley, rinsed
1 teaspoon salt
1/2 teaspoon freshly ground black pepper

Heat oil in 2 quart saucepan.
Add the onion and chopped pepper and cook, stirring often, until softened, about 5 minutes.
Add mushrooms and continue to cook, stirring often, until softened, about 3 minutes.
Stir in water and bring to a boil over high heat.
Add barley, salt and pepper.
Return to boiling.
Cover and simmer for 45 minutes, or until liquid has been absorbed.
